How Valonu A2 Bilona Ghee Is Made - The 7-Step Vedic Process

The process begins with the cow, not the jar.

Step 1

At our Gir Somnath gaushala, our Gir cows are milked by hand each dawn — only after the calf has fed. No machines, no suction, no stress. Stress-free cows produce milk with measurably higher fat content and better hormonal profile. The first principle of Valonu: the cow's dignity is the product's quality.

Gentle Slow Boiling

Step 2

Fresh milk is boiled slowly at ~85°C in an open vessel — not UHT pasteurised at 138°C like commercial dairy. This low-temperature approach eliminates harmful bacteria while preserving heat-sensitive enzymes, vitamins, and fat globule integrity that high-heat commercial processing destroys.

Overnight Culturing into Curd

STEP 3

Cooled to ~40–45°C, the milk is seeded with the previous day's natural curd as a probiotic starter. Left undisturbed for 8–12 hours, Lactobacillus bacteria ferment lactose into lactic acid - creating a complex, probiotic-rich curd that is the only legitimate starting material for authentic bilona ghee.

Sheesham Wood Bilona Churning

STEP 4

The heart of the process. Overnight curd is poured into a deep clay vessel. The sheesham (Indian rosewood) bilona churner is pulled by rope alternately clockwise and counter-clockwise — the ancient bidirectional motion that prevents heat buildup and separates butter without mechanically damaging the fat globule structure. 30–45 minutes per batch. No shortcuts.

Collecting Fresh Makhan

STEP 5

As churning continues, fat globules cluster together and rise as makhan — fresh, white, hand-churned butter. It is scooped out by hand and rinsed with cold water to remove excess buttermilk. What remains in the vessel is probiotic-rich chaas (buttermilk) — itself a traditional Ayurvedic digestive drink.

Slow Heating in Clay Pot

STEP 6

Fresh makhan is placed in a clay degchi over a low, controlled flame. Three layers naturally separate: water evaporates, milk solids caramelise at the bottom, and pure golden clarified fat rises to the top. The kitchen fills with a deep, nutty caramel fragrance — the natural purity indicator that chemically re-aromatised commercial ghee can never replicate.

Grain Forms, Ghee Is Ready

STEP 7

When moisture fully evaporates and milk solids settle golden at the bottom, the ghee is done. Filtered through fine cloth into sealed glass jars. When cooled, the natural golden crystalline grain forms — the chemical signature of triglyceride crystallisation from curd-derived butter. Lab tested. Batch-numbered. Dispatched fresh.
