At our Gir Somnath gaushala, our Gir cows are milked by hand each dawn — only after the calf has fed. No machines, no suction, no stress. Step 2

Fresh milk is boiled slowly at ~85°C in an open vessel — not UHT pasteurised at 138°C like commercial dairy. This low-temperature approach eliminates harmful bacteria while preserving heat-sensitive enzymes, vitamins, and fat globule integrity that high-heat commercial processing destroys.

Overnight Culturing into Curd

STEP 3

Cooled to ~40–45°C, the milk is seeded with the previous day's natural curd as a probiotic starter. STEP 4
